Thanks to the collaboration of over 100 families, we collect some hundreds of tons of mushrooms a year. They are divided after a careful analysis and a cleaning phase.
The young and good sized specimens are distributed in wooden boxes and sent, the same night, to both large-scale retailers and fruit and vegetable markets where they are sold as fresh products. The others are reduced to cubes or lamellae and stored in refrigerated cells where their path in the cold chain starts.
We use advanced machinery capable of freezing 1,500 kg of products in one hour. We thus ensure full traceability of the lot and the execution of all the controls required by current legislation on hygiene, analysis and control of food products.
FRESH PORCINI
The young and good sized specimens are distributed in wooden boxes and sent, the same night, to both large-scale retailers and fruit and vegetable markets where they are sold as fresh products.
DRIED PORCINI
The specimens destined to be sold as dried mushrooms are cut into lamellae and placed in the dryer. Once ready they are packaged and sent via our trucks to the GDO.
FROZEN PORCINI
The specimens destined for the cold chain are minutely cut into cubes and placed in the blast chiller. They will be destined for the cold chain.
